There are 187 chapters in the Torah.  Elohim is considered the most important word studied in Hebrew Gematria, being used in Genesis 1:1, and all throughout the Old Testament.  Of course, Gematria is connected to Hebrew, through Kabbalah, the belief that God created the world through language, when God merged the letter with the number.  And of course, the Old Testament is written in Hebrew.
